Decadent chocolate zucchini muffins loaded with double the chocolate goodness from mini chocolate chips - perfect for summer zucchini!
Ingredients:
  • 3 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 0.33300000429153 cup unsweetened cocoa powder
  • 1.5 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground cardamom
Instructions:
  • Heat the oven to 350°F (175°C). Grease or line two 12-cup muffin tins.
  • In a large bowl, whisk eggs until smooth. Incorporate sugar, oil, cocoa powder, and vanilla; whisk until fully combined. Fold in zucchini. Mix in flour, baking soda, salt, baking powder, cinnamon, nutmeg, cloves, and cardamom until just moistened.
  • Fill each prepared muffin cup with batter, leaving them 2/3 full. Bake in the preheated oven for 20-25 minutes or until the tops spring back when lightly pressed. Cool on a wire rack and store loosely covered once completely cooled.
