Chocolate-Caramel Tartlets

Easy and delightful mini treats with fluffy cream and chocolate chip filling.
Ingredients:
  • 1 (3-oz.) pkg. cream cheese, softened
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon sugar
  • 1/2 cup sugar
  • 4 teaspoons water
  • 1 tablespoon butter
  • 1/3 cup whipping cream
  • 1/4 cup semisweet chocolate chips
  • 1 oz. vanilla-flavored candy coating, if desired
Instructions:
  • Preheat the oven to 450°F. Mix all crust ingredients in a large bowl using an electric mixer on low speed until well combined. Divide the dough into 24 equal pieces and roll them into balls. Press each ball into the bottom and up the sides of ungreased miniature muffin cups.
  • Bake at 450°F for 7 to 9 minutes until edges turn light golden brown. Remove crusts from pans and place on wire racks to cool for 15 minutes or until completely cooled.
  • In a sturdy 1 1/2-quart saucepan, mix 1/2 cup sugar and water until well combined. Use a pastry brush dipped in water to brush any sugar down the sides of the saucepan. Cook over medium-high heat for 10 to 12 minutes until the mixture turns a dark golden brown without stirring. If the sugar mixture isn't cooking, gently swirl it in the saucepan. Take the saucepan off the heat. While constantly stirring, add 1 tablespoon butter and whipping cream until the bubbling stops. Put the saucepan back on low heat and cook while stirring until the mixture is smooth.
  • Fill each cooled baked crust with a generous 1/2 teaspoon of caramel mixture. Melt chocolate chips into the remaining caramel mixture until it's smooth. If the mixture thickens, gently heat and stir until smooth. Fill each crust with about 1 teaspoon of the chocolate filling.
  • Finely chop the candy coating and place it in a small microwave-safe bowl. Microwave on HIGH for 30 seconds, stirring until completely melted and smooth. If needed, microwave for an additional 10 seconds. Transfer the melted coating into a heavy-duty food storage plastic bag and cut a tiny hole in one corner. On waxed paper, pipe out 24 (1-inch) tree shapes. Allow them to set. Finally, decorate each tartlet with a festive tree shape on top.
