Butternut caramel chocolate ganache tartlets

Decadent chocolate ganache tartlets - easy to make, heavenly to taste.
Ingredients:
  • 12 Butternut Snap Cookies
  • 165g (3/4 cup) caster sugar
  • 60ml thickened cream
  • 40g butter
  • 150g dark chocolate, chopped
Instructions:
  • Grease a 12-hole round bottomed tartlet tin. Soften 6 biscuits in the microwave for 20 seconds. Roll out until 3mm thick, then press into the tin. Repeat with the remaining 6 biscuits.
  • In a heavy-based saucepan, mix sugar and 165ml water, stirring over low heat until the sugar dissolves. Turn up the heat to high and cook for 10-15 minutes until the mixture turns a deep golden color, periodically brushing down the sides with a wet pastry brush to remove sugar crystals. Take off the heat, carefully add cream and butter (be cautious of splattering), and stir until smooth. Pour the caramel into the biscuit cases and chill for 30 minutes until firm.
  • Melt the chocolate in a small heatproof bowl over simmering water and stir until smooth. Pour the melted chocolate over the caramel filling in the tartlets and refrigerate for an additional 10 minutes until set.
