Chocolate-Cherry Cupcakes with Cream Cheese Buttercream Frosting

Make chocolate-cherry cupcakes with maraschino cherries, devil's food cake, and buttercream frosting for a delicious family treat!
Ingredients:
  • 2 (10 ounce) jars stem-on maraschino cherries
  • 2 tablespoons Kirsch (cherry-flavored brandy), or as needed
  • 3 eggs
  • 0.5 cup vegetable oil
  • 1 (15.25 ounce) package devil's food cake mix
  • 2 (3 ounce) packages cream cheese, at room temperature
  • 6 tablespoons unsalted butter, at room temperature
  • 3 cups powdered sugar, sifted, or more as needed
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 24 muffin cups with paper liners.
  • Strain the maraschino cherries over a large measuring cup, reserving the syrup. Set aside 24 cherries with stems intact on paper towels. Remove stems from the rest of the cherries and place one in each lined muffin cup as a base.
  • Incorporate cherry-flavored brandy into the cherry juice. Adjust with more brandy or water to yield a total of 1 1/4 cups of liquid. Transfer the liquid into a bowl.
  • Combine eggs and oil, then use an electric mixer on low speed until just mixed. Gradually add cake mix and beat on medium speed for approximately 2 minutes. Distribute batter evenly into the muffin cups.
  • Bake the mixture in the preheated oven until a toothpick inserted into the center comes out clean, for 15 to 17 minutes. Allow it to cool in the tins for approximately 10 minutes before transferring to a wire rack to cool completely, around 50 minutes.
  • In a mixing bowl, blend cream cheese and butter using an electric mixer until smooth, about 1 minute. Mix in vanilla extract and salt for another minute. Gradually add powdered sugar, one cup at a time, beating well after each addition. Adjust consistency by adding more powdered sugar if needed.
  • Finish off each cupcake with a generous layer of frosting and top with the remaining cherries for a beautiful presentation.
