Chocolate Cherry Cupcakes

Decadent chocolate cake with layers of creamy pudding, sweet cherries, and luscious chocolate drizzle.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Devil's Food Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1/2 teaspoon almond extract, if desired
  • 1 can (21 oz) cherry pie filling
  • 2 containers (4 oz each) vanilla pudding
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Chocolate Frosting
Instructions:
  • Preheat the oven to 350°F (325°F for dark or nonstick pans). Prepare the cake mix according to the instructions on the box for 24 cupcakes, and stir in almond extract. Bake as directed. Let the cupcakes cool in the pans for 10 minutes, then transfer them to cooling racks. Allow them to cool completely for about 30 minutes.
  • Before serving, gently remove the paper baking cups. Using a serrated knife, slice the cupcake in half horizontally. Spread 1 tablespoon of cherry pie filling on the bottom half of the cupcake, then add 2 teaspoons of vanilla pudding. Place the top half of the cupcake back on. Enjoy!
  • Transfer the frosting into a small microwavable bowl and heat it uncovered on High for 30 seconds. Stir it until it becomes very soft and smooth, microwaving for an additional 5 to 15 seconds if needed. Drizzle 1 tablespoon of frosting over the cupcake and garnish with 1 cherry from the pie filling.
  • Frost the remaining cupcakes and enjoy promptly.
