Indulgent dark chocolate cherry coconut cupcakes perfect for a tea party or any occasion. Guaranteed to disappear quickly!
Ingredients:
  • 60g Block Cream Cheese, softened
  • 60g butter, softened
  • 107.50 gm caster sugar
  • 2 eggs, lightly beaten
  • 225.00 gm self-raising flour
  • 42.90 gm Cocoa
  • 169.95 gm milk
  • 100g Dark Chocolate Baking Chips
  • 125.00 ml red glacé cherries, halved
  • 21.25 gm desiccated coconut
  • Pink frosting, for decoration
Instructions:
  • Combine the PHILLY, butter, and sugar until light and fluffy. Slowly mix in the eggs, ensuring each addition is well incorporated. Gently blend in the sifted flour and cocoa along with the milk. Add the chocolate, cherries, and coconut, folding them in. Portion the mixture into 12 paper-lined muffin cups that hold 1⁄3 cup each.
  • Bake at 180C for 20–25 minutes or until fully cooked. Let it sit for 10 minutes before transferring to a wire rack to cool.
  • Frost the cakes and serve right away.
