Chocolate-Cherry Ice-Cream Cake

Prepare this make-ahead celebration cake for an exciting frozen treat!
Ingredients:
  • 16 Oreo chocolate creme sandwich cookies
  • 1/4 cup butter or margarine
  • 1 quart (4 cups) cherry or cherry vanilla ice cream, softened
  • 8 Oreo chocolate creme sandwich cookies, coarsely chopped
  • 1 cup miniature semisweet chocolate chips
  • 1 quart (4 cups) vanilla ice cream, softened
  • 1/2 cup fudge ice-cream sauce
  • Sweetened whipped cream, if desired
  • 12 fresh cherries with stems
Instructions:
  • Preheat oven to 350°F. Pulse 16 cookies in a food processor until finely ground. Add butter and pulse until combined. Press mixture into a 9x3 inch springform pan. Bake for 8 to 10 minutes until set. Allow to cool completely for about 30 minutes.
  • Wrap the outside of the springform pan with foil and evenly spread the cherry ice cream over the cooled crust. Place in the freezer for 30 minutes.
  • 1. Scatter chopped cookies and half a cup of chocolate chips over cherry ice cream, gently pressing them down. 2. Cover with a layer of vanilla ice cream. 3. Drizzle fudge sauce over the ice cream in small spoonfuls, swirling slightly. 4. Sprinkle the remaining half cup of chocolate chips over the top, gently pressing them down. 5. Freeze for about 8 hours until firm.
  • Allow the dessert to sit at room temperature for 5 to 10 minutes. Gently remove the side of the pan, then slice the dessert into wedges. Finish by topping each wedge with whipped cream and a cherry.
