Elevate your chocolate zucchini bread with warm cinnamon chips, moist applesauce, and wholesome whole wheat flour for a cozy fall treat.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 cups whole wheat flour
  • 0.25 cup unsweetened cocoa powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups brown sugar
  • 3 eggs
  • 1 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • 1 cup cinnamon baking chips
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease 2 9x5-inch loaf pans.
  • Combine all-purpose flour, whole wheat flour, cocoa powder, cinnamon, baking soda, baking powder, and salt in a bowl, ensuring they are well mixed. In a separate large mixing bowl, whisk together brown sugar, eggs, applesauce, and vanilla extract. Stir in zucchini and carefully mix in the flour mixture until just combined. Avoid overmixing. Gently fold in cinnamon baking chips, then evenly distribute the batter into prepared loaf pans.
  • Bake until golden brown and a toothpick comes out clean, 55-60 minutes. Cool in pans for 10 minutes before transferring to wire racks to finish cooling.
