Decadent Chocolate Zucchini Bread with a hint of Cinnamon.
Ingredients:
  • 3 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 3 eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • 1 cup chopped walnuts
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease two 9x5 inch loaf pans.
  • 1. In a large bowl, mix flour, cocoa, cinnamon, baking soda, baking powder, and salt until combined. In another bowl, beat sugar and eggs until well blended. 2. Add oil and vanilla, mix until combined. 3. Stir in zucchini. 4. Fold in the flour mixture until just moistened. 5. Gently mix in nuts and chocolate chips. 6. Distribute the batter evenly into loaf pans.
  • Bake in a preheated oven for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pans for 10 minutes, then transfer the bread from the pans onto a wire rack to cool completely.
