Easy vegan chocolate zucchini bread - rich, moist, perfect for breakfast or dessert.
Ingredients:
  • 0.75 cup cane sugar
  • 0.75 cup almond milk
  • 0.25 cup unsweetened applesauce
  • 0.25 cup coconut oil, melted
  • 0.33333334326744 cup cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon baking soda
  • 1 cup grated zucchini
  • 0.5 cup vegan chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a large mixing bowl, use an electric mixer to blend cane sugar, almond milk, applesauce, coconut oil, and vanilla until smooth and well combined.
  • In a separate bowl, combine flour, cocoa powder, baking powder, cinnamon, salt, and baking soda. Gradually blend the dry mixture into the wet ingredients using an electric mixer until well combined. Fold in zucchini and 1/4 cup of chocolate chips.
  • Transfer the batter into the bread pan, then generously garnish the top with the remaining 1/4 cup of chocolate chips.
  • Bake in the preheated oven for 50 to 55 minutes until the top springs back when lightly pressed and a toothpick comes out clean. Let it cool in the pan for 10 minutes before slicing only after completely cooling.
