Indulgent vegan zucchini brownies with rich fudgy texture and plenty of chocolate chips for chocolate lovers everywhere.
Ingredients:
  • 1 cup white sugar
  • 0.5 cup brown sugar
  • 0.5 cup olive oil
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 0.5 cup cocoa powder (such as Hershey's®)
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 3 cups shredded zucchini
  • 1 cup vegan chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a 9-inch square pan with cooking spray.
  • In a large bowl, blend together sugar, brown sugar, and olive oil using an electric mixer until thoroughly mixed. Stir in vanilla extract. Add flour, cocoa powder, baking soda, and salt, and mix until well combined (the mixture will appear dry).
  • Incorporate zucchini using a spoon and let it sit for 5 minutes to moisten. Stir in vegan chocolate chips and transfer batter to the prepared pan.
  • Bake in the preheated oven for 25-30 minutes until the top is dry and the edges begin to pull away from the sides of the pan. Allow to cool completely before slicing.
