Healthier zucchini muffins with less sugar and oil, vegan and dairy-free, yields 24 muffins.
Ingredients:
  • 0.5 cup warm water
  • 6 tablespoons flax seed meal
  • 1 cup turbinado sugar
  • 0.75 cup unsweetened applesauce
  • 0.25 cup safflower oil
  • 1 teaspoon vanilla extract
  • 2.5 cups zucchini, grated
  • 2 cups oat flour
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon ground cinnamon
  • 2 teaspoons ground nutmeg
  • 1 teaspoon salt
  • 1 cup raisins
Instructions:
  • Preheat your oven to 350°F (175°C), then prepare 2 muffin pans by greasing them.
  • Combine warm water and flaxseed in a large bowl, then add sugar, applesauce, oil, and vanilla extract. Fold in zucchini until fully incorporated.
  • Combine sifted oat flour, all-purpose flour, baking powder, cinnamon, nutmeg, salt, and baking soda in a bowl. Add raisins and mix into the zucchini mixture until just combined.
  • Scoop batter into muffin cups using a 1/4 cup measure.
  • Bake in the preheated oven until a knife comes out clean when inserted into a muffin, about 50-55 minutes.
