Decadent vegan chocolate-peanut butter pudding cups made in 5 mins with creamy avocado instead of eggs and dairy.
Ingredients:
  • For the coconut whipped cream:
  • 1 (14-ounce) can full-fat coconut milk
  • 1 tablespoon sugar
  • 1 teaspoon natural vanilla extract
  • For the pudding:
  • 1/3 cup unsweetened almond milk or other dairy-free milk
  • 4 medium ripe avocados, pitted and peels removed
  • 3/4 cup raw cacao powder or unsweetened cocoa powder
  • 3/4 cup pure maple syrup
  • 1/4 cup smooth peanut butter
  • To serve (optional):
  • 1/2 cup sliced raw almonds or peanuts
  • 2 cups fresh strawberries, sliced lengthways, or other berries
Instructions:
  • Refrigerate unopened can of coconut milk upright overnight until solid to allow the fats to separate from the liquid without shaking or flipping the can.
  • Prepare for making coconut whipped cream by chilling a mixing bowl for 15 to 30 minutes. Open a can of coconut milk without shaking it. Use a spoon to scoop out the solidified cream from the top of the can, leaving the liquid behind. Transfer the cream to the chilled mixing bowl, saving the liquid for other recipes.
  • Prepare the coconut whipped cream: In a stand mixer or using electric hand beaters with the whisk attachment, whip the cream on high for 2 to 3 minutes until it becomes light, fluffy, and soft peaks form. Take care not to overbeat. Then, add the sugar and vanilla, and beat briefly until well combined. Chill in the fridge as you move on to making the pudding.   • For the pudding, blend almond or coconut milk, avocado, cacao powder, maple syrup, peanut butter, and vanilla on high speed for 30 to 60 seconds until smooth and creamy. Use a high-speed blender's tamper to guide ingredients or stop a conventional blender to redistribute with a spatula if needed.
  • Prepare the pudding cups by layering velvety pudding into four elegant martini glasses, sophisticated cocktail glasses, or charming dessert bowls. Garnish each with 2 tablespoons of sliced almonds or peanuts, a layer of delicate sliced strawberries, if desired, and a generous dollop of luscious whipped coconut cream.
