Indulgent vegan pudding made with chocolate almond milk - ideal for those with dairy allergies.
Ingredients:
  • 0.33333334326744 cup unsweetened cocoa powder
  • 0.5 cup coconut sugar
  • 0.25 cup cornstarch
  • 3 tablespoons peanut butter powder
  • 2.25 cups chocolate-flavored almond milk
  • 0.5 teaspoon almond extract
  • 1/2 teaspoon peanut butter flavor (optional)
Instructions:
  • Combine cocoa powder, coconut sugar, cornstarch, and peanut butter powder in a saucepan. Gradually mix in 1/4 of the chocolate-flavored almond milk. Heat over medium-high heat. Pour in the rest of the almond milk and whisk until thickened, approximately 8 minutes. Add almond extract and peanut butter flavoring.
  • Let sit off the heat to cool for at least 1 hour before serving.
