Vegan peanut butter oatmeal cookies with chocolate chips and walnuts - a deliciously satisfying treat.
Ingredients:
  • 1 cup white sugar
  • 0.33333334326744 cup soy milk
  • 0.33333334326744 cup peanut butter
  • 2 tablespoons canola oil
  • 1 teaspoon pure vanilla extract
  • 1 cup whole wheat flour
  • 0.5 cup vegan semi-sweet chocolate chips
  • 0.5 cup walnut pieces
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and generously oil a large baking sheet.
  • Whisk sugar, soy milk, peanut butter, canola oil, and vanilla extract in a large bowl until silky smooth.
  • Combine flour, oats, baking soda, and salt in a separate bowl. Add this mixture to the peanut butter mixture and stir until well combined. Gently fold in the chocolate chips and walnut pieces.
  • Spoon generous dollops of batter onto the lined baking sheet.
  • Bake cookies until golden around the edges in a preheated oven for 10 minutes. Let cookies cool on the baking sheet for 10 minutes, then transfer to a cooling rack to cool completely.
