Satisfy everyone with these irresistible vegan chocolate chip cookies. A simple swap and adjustment transform traditional cookies into sweet, chewy delights that will have the whole family asking for more.
Ingredients:
  • 2/3 cup refined coconut oil, melted
  • 2/3 cup organic granulated sugar
  • 2/3 cup packed organic brown sugar
  • 1/2 cup unsweetened vanilla almond milk
  • 2 teaspoons vanilla
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 bag (10 oz) vegan semisweet chocolate chips (1 1/2 cups)
Instructions:
  • Preheat the oven to 350°F. Combine coconut oil, granulated sugar, and brown sugar in a large bowl, mixing well. Stir in almond milk and vanilla.
  • Mix together the flour, baking soda, baking powder, and salt until a dough forms. Add in the chocolate chips. Scoop out slightly rounded tablespoonfuls of dough onto ungreased cookie sheets, keeping them 2 inches apart.
  • Bake for 11 to 14 minutes until edges are lightly browned and tops are set. Allow to cool for 1 minute on the cookie sheets, then transfer to a cooling rack to cool completely. Store in a tightly covered container.
