Delicious vegan chocolate chip cookies with coconut made perfect for Christmas.
Ingredients:
  • 5 tablespoons water
  • 2 tablespoons ground flax seeds
  • 0.5 cup cane sugar
  • 0.33333334326744 cup coconut oil, melted
  • 0.25 cup almond milk
  • 0.25 cup almond butter
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 0.5 cup oats
  • 0.33333334326744 cup shredded coconut
  • 3 tablespoons cocoa powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup vegan chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then combine water and flax seeds in a bowl.
  • Combine the cane sugar, coconut oil, almond milk, almond butter, and vanilla extract in a bowl and mix well.
  • Combine flour, oats, shredded coconut, cocoa powder, baking soda, baking powder, and salt in a bowl. Mix in the sugar mixture, flax seed mixture, and chocolate chips. Drop spoonfuls of batter onto baking sheets.
  • Bake until beautifully golden brown, about 11-13 minutes in the preheated oven.
