Indulgent vegan chocolate chip cookies with coconut oil, almond milk, and plant-based chocolate chips for a perfect balance of gooey and crispy textures.
Ingredients:
  • 0.5 cup coconut oil
  • 0.25 cup almond milk
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup vegan chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine coconut oil and brown sugar in a bowl and beat with an electric mixer until well blended, for about 5 minutes. Add almond milk and vanilla and mix until well combined, for 1 to 2 minutes.
  • Combine flour, baking powder, baking soda, and salt in a bowl. Mix in with almond milk mixture until just combined; dough will be crumbly. Gently fold in chocolate chips.
  • Shape the dough into tablespoon-sized balls and arrange them on baking sheets without greasing. Gently press down each ball with your palm to slightly flatten, ensuring any loose crumbs stick together.
  • Bake in the hot oven until the edges turn a beautiful golden brown and firm up, approximately 8 minutes.
