Indulgent vegan chocolate chip cookies with brown sugar, coconut oil, and applesauce for a guilt-free treat.
Ingredients:
  • 0.5 cup coconut oil
  • 0.5 cup brown sugar
  • 0.33333334326744 cup white sugar
  • 0.5 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1.25 cups gluten-free all-purpose baking flour (such as Pillsbury®)
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup chocolate chips (such as Enjoy Life®)
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare 2 baking sheets with parchment paper.
  • Cream together coconut oil, brown sugar, and white sugar until light and fluffy, approximately 3 minutes. Incorporate applesauce and vanilla extract, followed by adding flour, baking soda, and salt until fully mixed. Gently fold in chocolate chips.
  • Spoon dough onto baking sheets, keeping 2 inches apart.
  • Bake in the preheated oven for 8-10 minutes until the bottoms are brown and the tops appear slightly undercooked. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely for about 10 more minutes.
