Indulgent vegan mint chocolate chip ice cream made with creamy coconut milk, bursting with refreshing mint and loaded with chocolate chips.
Ingredients:
  • 2 (14-ounce) cans full-fat coconut milk
  • 1/2 cup (100g) granulated sugar
  • 1/4 teaspoon kosher salt
  • 2 tablespoons cornstarch
  • 1/4 teaspoon vanilla extract
  • 3/4 teaspoon peppermint extract
  • 3 1/2 ounces bittersweet chocolate, chopped into pieces (about 3/4 cup; use allergy-friendly chocolate if needed)
Instructions:
  • Prepare your equipment by placing the freezer bowl of your ice cream maker in the freezer the day before making the ice cream.
  • Prepare the base: Reserve 1/4 cup of coconut milk in a small bowl. In a medium saucepan over medium heat, mix the rest of the coconut milk with sugar and salt. Heat until the sugar dissolves completely, approximately 2 minutes, stirring occasionally.
  • Create a luscious cornstarch slurry by whisking it into the bowl of reserved coconut milk until fully dissolved.
  • Incorporate the cornstarch slurry: Thoroughly mix the cornstarch combination into the heated coconut milk on the stovetop and simmer over medium heat until it thickens and coats the back of a spoon, which should take about 6 to 8 minutes. Remember to avoid boiling the mixture.
  • Enhance the taste: Take the mixture off the heat and mix in the vanilla and peppermint extracts.
  • Chill the ice cream base: Transfer the mixture to a shallow container and let it cool at room temperature for 20 minutes. Cover and refrigerate for at least 3 hours, or up to 3 days.
  • Churn ice cream: Once the base mixture is thoroughly chilled, transfer it to your ice cream machine and churn for 10 to 15 minutes per the manufacturer's instructions until it reaches a soft, thick consistency similar to frozen custard or soft serve ice cream.
  • Add the chocolate: While the ice cream is still churning, incorporate the chocolate chunks and mix until just combined.
  • Chill until firm: Transfer the ice cream into a loaf pan or a freezer-safe container, and securely cover with plastic wrap. Freeze for a minimum of 3 hours until the ice cream is firm. Prior to serving, let the ice cream soften on the counter until scoopable, approximately 10 minutes.
