Dairy-free chocolate and berry terrine recipe

Indulge in a rich, creamy dairy-free chocolate dessert topped with fresh berries for a delightful post-dinner indulgence.
Ingredients:
  • 500ml dairy-free dark chocolate sorbet
  • 500ml dairy-free coconut sorbet
  • 500g pkt frozen mixed berries, thawed slightly
  • 200g yoghurt
  • 62.50 ml mint leaves
Instructions:
  • Prepare a 10cm x 20cm loaf pan by greasing it and lining the base and sides with baking paper, leaving some extra paper hanging over the sides.
  • Place the chocolate sorbet and coconut sorbet in individual bowls and let them sit for 5 minutes to soften slightly.
  • Set aside 1 cup of the berries in the freezer. Blend the rest of the berries in a food processor until smooth.
  • Layer the chocolate sorbet, berry puree, and coconut sorbet in the prepared pan. Finish with a final layer of chocolate sorbet. Smooth the surface, tap the pan to remove air bubbles, cover with foil, and freeze for 6 hours until firm.
  • Take the terrine out of the freezer and let it sit out for 5 minutes to soften. Transfer it onto a serving plate, then generously spoon coconut yogurt over the top and finish with the reserved berries. Sprinkle some fresh mint on top for extra flavor.
