Decadent dairy-free chocolate apple cake.
Ingredients:
  • 425g can apple pie fruit
  • 60ml water
  • 2.50 gm bicarbonate soda
  • 125g non-dairy spread
  • 220g caster sugar
  • 4.40 gm vanilla extract
  • 300g self-raising flour
  • 20.00 gm cocoa
Instructions:
  • Preheat your oven to 180°C. Grease a 20cm cake pan and line it with non-stick baking paper on the base and sides.
  • In a small pan, gently heat apple, water, and soda until soda begins to bubble; then, remove from heat.
  • In a medium bowl, use an electric mixer to beat together spread, sugar, and vanilla until light and fluffy. Add sifted flour and cocoa, then gently fold in the apple mixture.
  • Spoon the mixture into the prepared pan and bake for approximately 40 minutes, or until a skewer inserted comes out clean. Allow to cool on a wire rack.
