Gluten and dairy-free chocolate bread and butter pudding

Decadent allergy-friendly chocolate dessert.
Ingredients:
  • 500.00 ml almond milk
  • 75g dairy-free dark chocolate, chopped
  • 10.00 gm cocoa powder, sifted
  • 3 eggs
  • 20.00 gm caster sugar
  • 25g dairy-free spread
  • 400g fruit bread
  • 62.50 ml mixed dried fruit (see note)
  • Gluten-free pure icing sugar, for dusting
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced) and generously grease a 8cm-deep, 19cm x 26cm (6-cup capacity) baking dish.
  • In a small saucepan over low heat, combine almond milk, chocolate, and cocoa. Stir constantly for 5 to 6 minutes until silky smooth. Remove from heat.
  • Beat eggs and sugar with an electric mixer until thickened. Then, add the mixture to the chocolate and stir to combine.
  • Spread a generous amount of spread on one side of each bread slice. Cut each slice in half diagonally. Arrange the slices in rows at the base of the dish. Sprinkle the dried fruit over the bread. Pour the chocolate mixture evenly over the bread. Bake for 30 to 35 minutes until golden and set. Allow it to stand for 10 minutes before serving. Serve warm and dust with icing sugar.
