Try delectable Chocolate chia seed and berry puds for a unique and healthy dessert option.
Ingredients:
  • 2½ cups of Pureharvest Coco Quench Coconut Milk
  • 32.50 gm Dutch processed cocoa powder
  • 88.75 gm rice malt syrup
  • 125.00 ml chia seeds
  • 500.00 ml mixed frozen berries
Instructions:
  • In a large mixing bowl, combine coconut milk and coconut powder using a sieve. Mix thoroughly. Stir in rice malt syrup until well combined, then add chia seeds. Stir continuously for about 5 minutes until the pudding thickens as the chia seeds expand.
  • Transfer the mixture evenly into serving glasses or jars, then tightly cover with cling wrap. Refrigerate for at least 4 hours or preferably overnight.
  • In a saucepan, gently heat frozen berries with ¼ cup of water on low heat, swirling the pan occasionally until berries are just defrosted. Set aside until serving.
  • Garnish puddings with fresh berries and drizzle with juice before serving.
