Decadent chocolate chia pudding with a hint of raspberry, sweetened naturally with dates and spiced with mixed spice. A guilt-free, delicious dessert made with almond milk and coconut water.
Ingredients:
  • 3 tsp raw cacao powder
  • 1.25 gm ground mixed spice
  • 250ml (1 cup) almond milk
  • 12 fresh dates, pitted
  • 2 bananas, peeled
  • 165g (3/4 cup) white chia seeds, plus extra to serve
  • 250g (2 cups) frozen raspberries, plus extra to serve
  • 1 tsp vanilla bean paste
  • 20g (1/4 cup) shredded coconut, plus extra to serve
  • 250ml (1 cup) coconut water
  • Fresh mint sprigs, to serve
Instructions:
  • In a blender, combine cacao, mixed spice, almond milk, half of the dates, and 1 banana until smooth. Transfer the mixture to a bowl, then stir in 1/4 cup of chia seeds. Chill in the fridge for 30 minutes to thicken.
  • For the raspberry layer, blend raspberries, vanilla, coconut, coconut water, bananas, and dates in a clean blender until smooth. Pour the mixture into a bowl and stir in the remaining chia seeds. Chill in the fridge for 30 minutes to thicken.
  • Divide the cacao chia mixture evenly among four jars or glasses. Add the raspberry chia mixture on top. Finish with extra raspberries, shredded coconut, mint, and additional chia seeds. Enjoy right away or refrigerate covered overnight before serving.
