Indulge in a decadent vegan gluten-free chocolate cake, bursting with rich flavor and topped with fresh berries.
Ingredients:
  • 1.5 cups teff flour
  • 7 tablespoons rice flour
  • 5 tablespoons arrowroot starch
  • 2.5 tablespoons brown sugar
  • 2 teaspoons instant coffee granules
  • 1 teaspoon baking soda
  • 9 ounces dark chocolate, chopped
  • 2 tablespoons soy milk
  • 2 cups soy milk
  • 1 tablespoon cider vinegar
  • 2 ounces dark chocolate, chopped, divided
  • 1 teaspoon coconut oil
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then generously grease a 9-inch springform pan and line it with parchment paper.
  • In a large bowl, mix together teff flour, rice flour, arrowroot, sugar, coffee, baking soda, and salt.
  • In a double boiler, melt chocolate with 2 tablespoons of soy milk. Keep stirring and scraping down the sides with a rubber spatula to prevent scorching, for about 5 minutes. Once melted, stir in 2 cups of soy milk until well combined. Finally, add the vinegar.
  • Pour the luscious chocolate mixture over the flour blend and gently mix together until the batter is beautifully integrated. Then, transfer the mixture into the springform pan and use the spatula to evenly level it out.
  • Bake in the preheated oven until just set with a slight softness, approximately 35 minutes. Let it cool briefly in the pan, then transfer to a wire rack to cool completely for about 45 minutes.
  • Prepare the glaze while the cake cools by melting chocolate and coconut oil together in a double boiler until smooth and glossy, approximately 5 minutes. Pour the decadent chocolate mixture over the cake, ensuring it covers every inch, and let it set before slicing into this glorious dessert.
