Create gooey vegan blondies by swapping honey for maple syrup in soya yogurt batter for optimal stickiness.
Ingredients:
  • 150 g gluten-free flour
  • 1 teaspoon gluten-free baking powder
  • ½ teaspoon fine sea salt
  • 200 g soya yogurt
  • ½ a vanilla pod
  • 2 tablespoons honey or maple syrup
  • 250 g light brown sugar
  • 200 g vegan chocolate (70%)
Instructions:
  • - Preheat your oven to 180°C/350°F/gas 4 and line a 23cm square brownie tin with greaseproof paper. - Sift flour, baking powder, and sea salt into a bowl. - Split the vanilla pod, scrape the seeds into a large bowl, and mix with soya yogurt, honey, and sugar until well combined. - Gently fold in the dry ingredients, followed by roughly chopped chocolate. - Pour the batter into the prepared pan and spread evenly with a spoon or spatula. - Bake for 30-35 minutes until the top is firm and golden. - Cool the blondie completely in the pan before cutting into 12 pieces and serving.
