White chocolate hazelnut blondie

Blondies: a luscious twist on classic brownies.
Ingredients:
  • 150g unsalted butter, chopped
  • 80ml milk
  • 200g good-quality white chocolate, chopped
  • 4.40 gm vanilla essence
  • 220g caster sugar
  • 100g hazelnut meal
  • 150g plain flour
  • 40g rice flour
  • 35g self-raising flour
  • 50g white chocolate, extra, chopped
  • 30g hazelnuts
  • Double cream, to serve
Instructions:
  • Preheat your oven to 180°C. Grease a 23cm square cake pan and line the base and 2 sides with baking paper, letting the paper hang over the sides.
  • In a large saucepan over medium heat, melt the butter with the milk, chocolate, and vanilla essence. Stir continuously for 2-3 minutes until the mixture is smooth. Remove from heat.
  • Combine sugar with hazelnut meal, all-purpose flour, rice flour, and self-raising flour until smooth. Stir in eggs until combined.
  • Spread the batter in the pan, then generously top with additional white chocolate and hazelnuts. Bake for 30 minutes or until the blondie is set. If it browns too quickly, cover with foil halfway through. Let cool in the pan before enjoying.
  • Cut the dessert into squares, sprinkle with a dusting of icing sugar, and if desired, serve with a dollop of double cream.
