Indulge in delicious vegan chocolate chip cookies with no gluten, dairy, nuts, or seeds for a classic treat.
Ingredients:
  • 2 cups gluten-free oat flour
  • 2 tablespoons coconut flour
  • 0.25 teaspoon baking soda
  • 0.5 cup palm shortening
  • 2 tablespoons palm shortening
  • 0.5 cup coconut sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup vegan chocolate chips
Instructions:
  • Combine oat flour, coconut flour, salt, and baking soda in a bowl, blending well.
  • In a bowl, use an electric mixer to cream 1/2 cup plus 2 tablespoons of shortening and coconut sugar until light and fluffy. Add eggs one at a time, beating well and scraping down the sides of the bowl. Mix in vanilla, then slowly incorporate dry ingredients. Stir in chocolate chips and chill dough in the refrigerator for 30 minutes.
  • Preheat the oven to a toasty 350°F (175°C).
  • Shape tablespoon-sized portions of dough into round balls. Arrange them on a non-greased baking sheet and gently flatten with moistened fingers.
  • Bake in the preheated oven for 14 minutes until golden brown. Allow the tender cookies to cool on the cookie sheet for 10 minutes. Finish cooling completely on a wire rack.
