Indulge in decadent gluten-free, vegan chocolate chip cookies.
Ingredients:
  • 2.5 cups gluten-free all-purpose flour (such as King Arthur®)
  • 1 teaspoon baking soda
  • 2 cups light brown sugar
  • 0.5 cup vegan butter (such as Earth Balance®), softened
  • 2 large eggs
  • 1.5 teaspoons vanilla extract
  • 1.5 cups vegan chocolate chips (such as Enjoy Life®)
Instructions:
  • Preheat your oven to 325°F (165°C) and line two baking sheets with parchment paper.
  • Combine the flour, baking soda, and salt by whisking them together.
  • Cream brown sugar and vegan butter in a large bowl for 2 to 3 minutes. Stir in eggs and vanilla. Add flour mixture and mix until combined. Gently fold in vegan chocolate chips.
  • Spoon dollops of dough onto the baking sheets, spacing them 2 inches apart.
  • Bake in the preheated oven for about 10 minutes, rotating halfway through, until edges are golden. Let cool briefly on the baking sheet before transferring to a wire rack to cool completely.
