Indulgent caramel apples coated in nuts and drizzled with chocolate. Perfect for entertaining guests!
Ingredients:
  • 6 wooden skewers or 6 wooden sticks with rounded ends
  • 6 medium apples
  • 1 cup coarsely chopped mixed nuts
  • 2 tablespoons water
  • 1 bag (14 ounces) caramels
  • 1/2 cup semisweet chocolate chips
  • 1 tablespoon shortening
Instructions:
  • Skewer each apple at the stem end. Divide the nuts into 6 mounds on waxed paper.
  • Gently melt caramels in warm water over low heat until smooth. Keep caramel warm. Dip apples in caramel, coating them thoroughly. Reheat caramel if it thickens. Roll apples in nuts and let them cool on waxed paper.
  • Melt chocolate chips and shortening over low heat, stirring occasionally until smooth. Drizzle chocolate over each apple, letting it cascade down the sides. Allow coating to set. Keep loosely covered at room temperature or in the refrigerator for up to 1 week. Microwave Option: Follow apple and nut preparation. Heat water and caramels in a 4-cup microwave-safe container on High for 3 to 4 minutes, stirring halfway until smooth. Proceed as directed. If caramel thickens, microwave for about 30 seconds. Melt chocolate chips and shortening in a 1-cup microwave-safe container on Medium (50%) power for 2 to 3 minutes until smooth.
