Chocolate-Orange Cupcakes

Elevate chocolate cupcakes with a zesty twist of orange for a delightful treat.
Ingredients:
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup hot water
  • 2/3 cup unsweetened baking cocoa
  • 3/4 cup shortening
  • 1 1/2 cups granulated sugar
  • 2 tablespoons grated orange peel
  • 1/2 cup butter or margarine, softened
  • 3 oz unsweetened baking chocolate, melted, cooled
  • 3 cups powdered sugar
  • 2 teaspoons vanilla
  • 2 to 3 tablespoons orange juice
  • 6 orange slice candies (wedges)
Instructions:
  • Preheat oven to 350°F and line 24 regular-size muffin cups with paper baking cups.
  • In a medium bowl, combine flour, baking soda, salt, and baking powder; set aside. In a small bowl, stir together hot water and cocoa until dissolved; set aside.
  • In a large bowl, cream shortening with an electric mixer on medium speed for 30 seconds. Slowly add granulated sugar, about 1/4 cup at a time, mixing well after each addition and scraping the bowl occasionally. Continue to beat for 2 minutes. Add eggs one by one, mixing well after each addition. Incorporate 1 teaspoon of vanilla extract and orange peel. On low speed, add the flour mixture in thirds and the cocoa mixture in halves, mixing until just combined.
  • Evenly distribute the batter among the muffin cups, filling each one with approximately 3 tablespoons of batter or until they are about two-thirds full.
  • Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Let them cool for 5 minutes, then remove the cupcakes from the pans and place them on cooling racks. Allow them to cool completely for about 30 minutes.
  • In a large bowl, blend butter and melted chocolate together. Add powdered sugar and mix well. Stir in 2 teaspoons vanilla and 2 tablespoons orange juice until smooth. If needed, add more orange juice, 1 teaspoon at a time, until the frosting reaches a spreadable consistency. Frost the cooled cupcakes generously.
  • Cut each orange slice candy in half horizontally, then cut each half into 6 equal pieces. Top each cupcake with 3 candy pieces for garnish.
