Decadent fudgy chocolate peppermint crinkle cookies, ideal for festive cookie swaps.
Ingredients:
  • 0.5 cup unsweetened cocoa powder
  • 2 large eggs
  • 3 teaspoons peppermint extract, or more to taste
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup semisweet chocolate chips
  • 0.25 cup confectioners' sugar
Instructions:
  • In a bowl, whisk together white sugar, cocoa, and vegetable oil. Add eggs and peppermint extract and beat until combined. In a separate bowl, mix flour, baking powder, and salt together, then combine with the cocoa mixture. Stir in chocolate chips.
  • Wrap the dough and chill in the freezer for 1 hour (or in the fridge for 3 hours or more).
  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Remove the dough from the freezer and scoop by rounded tablespoons. Shape into balls using clean hands, then coat each ball in confectioners' sugar before placing on baking sheets.
  • Bake in the preheated oven for around 20 minutes or until a toothpick comes out mostly clean.
