Chocolate-Raspberry Crepes

Indulgent chocolate crepes filled with creamy cheese and raspberry - a decadent dessert for entertaining.
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 teaspoons butter, melted
  • 0.25 teaspoon salt
  • 1 lemon, zested
  • 1 tablespoon butter, or as needed
  • 1 (12 ounce) package frozen raspberries, thawed
  • 1 (8 ounce) carton sour cream
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup powdered sugar
Instructions:
  • In an electric blender, mix together flour, milk, sugar, eggs, butter, cocoa powder, vanilla extract, salt, and lemon zest until smooth. Transfer the batter to a shallow pie pan.
  • Heat butter in a frying pan or crepe maker over medium heat until melted. Pour 2 tablespoons of batter into the skillet, swirling to spread it thinly. Cook until top is dry and bottom is light brown, about 1-2 minutes. Gently loosen edges with a spatula, flip, and cook the other side until light brown, about 1 minute. Repeat with remaining batter.
  • In a medium bowl, use an electric mixer to blend raspberries, sour cream, cream cheese, and powdered sugar until smooth. Spoon the filling onto each crepe, then fold or roll them up.
