Choc-chip pancakes with nougat ice-cream and raspberry compote

Irresistible choc-chip pancakes.
Ingredients:
  • 1 x 1L ctn vanilla ice-cream, softened
  • 200g almond nougat, coarsely chopped
  • 1 x 300g pkt frozen raspberries, thawed
  • 40.00 gm caster sugar
  • 225g (1 1/2 cups) self-raising flour
  • 55g (1/4 cup) caster sugar, extra
  • 310ml (1 1/4 cups) milk
  • 2 eggs, lightly whisked
  • 4.40 gm vanilla essence
  • 1 x 250g pkt white choc chips
  • Melted butter, to grease
  • Icing sugar mixture, to dust
Instructions:
  • In a large bowl, combine the ice cream and nougat by gently folding them together. Then, transfer the mixture to a metal container, cover with foil, and freeze for 2-3 hours until firm.
  • Place the raspberries and sugar in a saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves, about 2-3 minutes. Transfer the mixture to a glass bowl, cover, and chill in the fridge for 1 hour.
  • In a medium bowl, mix the flour and extra sugar. Create a well in the center. In a separate jug, whisk together the milk, egg, and vanilla. Slowly pour the milk mixture into the flour mixture while whisking until a smooth batter forms. Stir in the choc chips. Cover with plastic wrap and let it rest for 20 minutes.
  • Grease a non-stick frying pan with a touch of melted butter and warm it over medium-low heat. Drop three 2-tablespoonful portions of batter into the pan, leaving space for them to spread. Cook for 1 1/2 minutes or until bubbles form on top and pancakes are golden brown underneath. Flip and cook for another minute or until golden. Place on a plate and cover with foil to keep warm. Repeat with the rest of the melted butter and batter in 5 more batches, making sure to reheat the pan between each batch.
  • Serve the pancakes on individual plates, sprinkle with icing sugar, add a scoop of nougat ice-cream on top, and spoon raspberry compote over them. Enjoy!
