Warm choc-chip pikelets with caramelised pears and chocolate sauce

Decadent pikelets with dark chocolate chips, chocolate sauce, and caramelised pears for a gourmet chocolate lover's delight.
Ingredients:
  • 4 eggs
  • 40.00 gm caster sugar
  • 375ml buttermilk
  • 100g unsalted butter, melted and cooled
  • 225g self-raising flour
  • 140g chocolate chips
  • Chocolate sauce (see related recipe), to serve
  • 3 beurre bosc or Williams pears
  • 10.60 gm lemon juice
  • 30g unsalted butter
  • 165g caster sugar
Instructions:
  • Prepare the pears by peeling and coring them. Slice them into 1cm-thick pieces and toss them in juice. In a frypan over medium-low heat, melt the butter. Add sugar, stir until dissolved, then add the pears. Gently stir for 6-8 minutes until starting to caramelize. Increase heat to medium and stir for another 3-4 minutes until almost translucent. Remove from heat and set aside.
  • Whip eggs and sugar with an electric mixer until light and fluffy. Mix in the buttermilk and half of the butter. In a separate bowl, sift flour, then gently fold in the egg mixture and chocolate chips using a hand whisk.
  • Heat a non-stick pan over medium-high heat and brush with the remaining butter. Spoon 3-4 tablespoonfuls of batter for each pikelet into the pan. Cook for 1-2 minutes until bubbles form on the surface. Carefully flip and cook for an additional minute until golden. Keep warm in a low oven as you cook the rest of the pikelets, brushing the pan with more butter between batches.
  • Arrange 3 pikelets on each plate, add pears with syrup, drizzle with chocolate sauce, and serve with cream or ice cream, if desired.
