Indulgent mascarpone and chocolate icebox cake, ready in just 20 minutes. Chill for the ultimate creamy and decadent treat.
Ingredients:
  • 1 lb fresh strawberries, cut into quarters
  • 3 tablespoons powdered sugar
  • 3 cups cold whipping cream
  • 1 container (8 oz) mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 box (14.4 oz) chocolate graham crackers
  • 1 cup miniature semisweet chocolate chips
Instructions:
  • Place fresh, juicy strawberries in a medium bowl and generously sprinkle them with 3 tablespoons of powdered sugar. Allow the vibrant fruits to macerate for 10 minutes, then gently crush them using a potato masher or the back of a spoon. Set this luscious strawberry mixture aside for later use.
  • In a large bowl, whip the whipping cream with the whisk attachment of an electric mixer on low speed until stiff peaks form.
  • Combine cheese, 1/2 cup powdered sugar, and vanilla in a medium bowl. Use an electric mixer on medium speed until blended. Gently fold in whipped cream, followed by mashed strawberries.
  • In a 13x9-inch pan, create a base with a single layer of graham crackers. Spread a third of the strawberry-cream mixture over the crackers, then sprinkle 1/3 cup of chocolate chips. Repeat the layers twice. Chill in the refrigerator for 2 hours before enjoying.
