Delicious icebox cake with strawberry Oreos, creamy strawberry-infused filling, topped with grated chocolate and fresh strawberries.
Ingredients:
  • 2.5 cups heavy cream
  • 2 tablespoons white sugar
  • 2 teaspoons strawberry extract
  • 0.75 cup milk
  • 16 ounces strawberry sandwich cookies (such as Oreo® Strawberry Cream)
  • 2 tablespoons grated milk chocolate
  • 10 fresh strawberries for garnish
Instructions:
  • Use an electric mixer to beat cream in a chilled glass or metal bowl until frothy. Gradually add sugar while continuing to beat until soft peaks form. Stir in strawberry extract. Spread a thin layer of strawberry cream on the bottom of a rectangular dish.
  • In a bowl, gently coat each side of the Oreo with milk for a few seconds, then remove any excess.
  • Spread a generous teaspoon of strawberry cream on a cookie and sandwich it with another. Arrange the cookies in the dish lengthwise, creating about 10 cookies in each row. Keep layering the cookies to form about 4 rows in total.
  • Spread the remaining cream over the cookies, then generously sprinkle grated chocolate on top.
  • Cover the icebox cake with a sheet of parchment paper to prevent sticking, then cover the dish with aluminum foil.
  • Chill in the refrigerator until cookies become tender, at least 8 hours to overnight. Top with fresh strawberries before presenting.
