Exotic Indian chickpea dish with anise, turmeric, and garam masala for bold vegetarian flavors.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 1 teaspoon minced garlic
  • 1 teaspoon minced fresh ginger root
  • 2 star anise pods, broken into pieces
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 (8 ounce) can tomato sauce
  • 0.5 cup water
  • 1 teaspoon chile powder
  • 1 teaspoon garam masala
  • 0.75 teaspoon salt
  • 0.75 teaspoon ground cumin
  • 0.75 teaspoon ground coriander
  • 0.25 teaspoon ground turmeric
  • 1 whole clove, or more to taste
Instructions:
  • In a pot over medium-high heat, warm oil. Cook onion until translucent, around 5 minutes. Mix in garlic, ginger, and anise. Stir in chickpeas, tomato sauce, water, chile powder, garam masala, salt, cumin, coriander, turmeric, and clove. Lower heat to medium-low, cover, and simmer until chickpeas are tender, about 5 to 7 minutes.
  • Mash a portion of the chickpeas in the pot to create a thicker sauce. Let it simmer covered for about 15 minutes, stirring occasionally for flavors to meld. Before serving, remember to remove the star anise pieces and clove.
