30-minute vegetarian chickpea curry.
Ingredients:
  • Olive oil spray
  • 1 large red onion, halved, thinly sliced
  • 1-2 long fresh green chillies, finely chopped
  • 2 tsp finely grated fresh ginger
  • 1 tsp garam masala
  • 1 tsp ground coriander
  • 2 x 420g cans no-added-salt chickpeas, rinsed, drained
  • 400g can chopped tomatoes
  • 125ml (1/2 cup) water
  • 1 bunch English spinach, trimmed, shredded
  • 4.50 gm white sugar
  • Fresh coriander sprigs, to serve
  • 4 roti breads, warmed, to serve
Instructions:
  • Heat a large saucepan over medium heat and spray with oil. Sauté onion until soft, about 5 minutes. Add chili, ginger, garam masala, and ground coriander, cook until aromatic for 1-2 minutes. Coat chickpeas with the spices. Pour in tomato and water mixture, simmer for 10 minutes until thickened. Lastly, combine spinach and sugar into the mixture.
  • Season the dish with a pinch of salt and a sprinkle of pepper according to your preference. Garnish with fragrant fresh coriander and enjoy with warm roti.
