Authentic Thai prawn curry bursting with bold flavors.
Ingredients:
  • 9.20 gm peanut oil
  • 1 brown onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 fresh red chilli, finely chopped
  • 1kg medium green prawns, peeled
  • 40.00 ml sambal oelek
  • 1 x 400ml can coconut milk
  • 10.60 gm soy sauce
  • 12.20 gm fish sauce
  • 12.20 gm oyster sauce
  • 6 fresh curry leaves
  • 1 bunch fresh Thai basil, leaves picked
  • 1 bunch fresh coriander, sprigs picked
  • Steamed white rice, to serve
Instructions:
  • In a wok or large deep frying pan over medium-high heat, heat oil until shimmering. Stir-fry onion, garlic, chili, prawns, and sambal oelek until prawns change color, about 2-3 minutes.
  • Combine the coconut milk, soy sauce, fish sauce, and oyster sauce in a pot and bring to a boil. Then, simmer over medium heat for 1 minute.
  • Add the fragrant curry leaves, fresh basil, and aromatic coriander to the dish. Serve alongside fluffy rice.
