Make a quick and delicious chopped chicken salad for a perfect desk lunch!
Ingredients:
  • 2 small wholemeal pita breads
  • 350g broccoli, cut into florets
  • 250g lean skinless barbecued chicken, chopped
  • 4 radishes, cut into thin wedges
  • 3 celery sticks, thinly sliced
  • 1 baby cos lettuce, trimmed, chopped
  • 125.00 ml chopped fresh mint leaves
  • 31.50 gm fresh lemon juice
  • 7.20 gm honey
  • 1 tsp garam masala
  • 40g feta, crumbled
  • 40g (1/4 cup) pomegranate seeds
Instructions:
  • Preheat the oven to 180°C/160°C fan forced. Place the pita breads on a baking tray and bake for 10-12 minutes until they are crisp. Allow them to cool before using.
  • Steam the broccoli over boiling water for 2 minutes until just tender. Drain, refresh under cold running water, and coarsely chop.
  • Tear the bread into bite-sized pieces and toss together with the broccoli, chicken, radish, celery, lettuce, and mint in a large bowl.
  • Combine lemon juice, olive oil, honey, and garam masala in a small bowl, whisking until well mixed. Drizzle over the salad, gently mix, and top with feta and pomegranate seeds before serving.
