Refreshing summer salad with iceberg lettuce, spinach, oranges, and veggies, drizzled with zesty lime-cilantro vinaigrette.
Ingredients:
  • 1 head iceberg lettuce, chopped
  • 1 bunch fresh spinach, stems removed, chopped
  • 1/2 cup chopped carrots
  • 1/2 cup sliced radishes
  • 2 oranges, peeled, sectioned and chopped
  • 1/4 cup chopped pecans, toasted
  • 1 cup fresh cilantro leaves
  • 1/2 cup lime juice
  • 1/2 cup orange juice
  • 1/3 cup olive oil
  • 1 clove garlic, finely chopped
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Instructions:
  • Combine all salad ingredients in a large bowl, ensuring they are evenly mixed, or create a beautiful layered presentation by arranging lettuce and spinach on a serving platter topped with carrots, radishes, oranges, and pecans.
  • Combine all vinaigrette ingredients in a blender and blend on high speed until smooth. Drizzle over salad or serve on the side.
