Indulge in a comforting bowl of spicy chorizo stew.
Ingredients:
  • 9.20 gm olive oil
  • 500g uncooked chorizo sausages
  • 2.50 gm smoked paprika
  • 410g can diced tomatoes (with basil and garlic)
  • 400g can chickpeas, drained, rinsed
  • 80g baby spinach
  • 4 slices sourdough bread, chargrilled, to serve
Instructions:
  • In a large, deep frying pan over medium-high heat, heat oil. Cook chorizo for 8 minutes, turning occasionally. Transfer chorizo to a cutting board and slice.
  • Sprinkle paprika into the pan and cook until fragrant. Add the sausages back into the pan along with tomato, chickpeas, and 1/2 cup of cold water. Cover and simmer on medium-high heat for 10 minutes until sausages are fully cooked. Take off the heat and gently fold in the spinach.
  • Pair the hearty stew with slices of perfectly chargrilled bread.
