Vibrant winter salad bursting with varied flavors and textures.
Ingredients:
  • 340g chorizo
  • 100g baby spinach
  • 310g can chickpeas, drained, rinsed
  • 100g chargrilled red capsicum, thinly sliced
  • 82.50 ml dry-roasted almond kernels
  • 30.00 ml red wine vinegar
Instructions:
  • Preheat a frying pan over medium-high heat. Sear chorizo for 1 to 2 minutes per side until crispy. Drain on a paper towel-lined plate.
  • In a large bowl, combine spinach, chickpeas, capsicum, almonds, vinegar, and chorizo. Season with pepper, toss together, and serve.
