Transform sausages into savory meatballs for a delicious addition to a rich tomato sauce.
Ingredients:
  • 600g chorizo sausages
  • 9.20 gm olive oil
  • 1 brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 200g cherry tomatoes, halved
  • 690g tomato pasta sauce
  • 40.00 ml chopped fresh continental parsley
  • 500g fettuccine
  • 40.00 ml fresh basil leaves
  • Grated parmesan, to serve
Instructions:
  • Peel off sausage casing and shape into small balls. Heat oil in a non-stick pan over medium-high heat, then fry meatballs, turning occasionally, until golden brown, about 4-5 minutes. Place on a plate.
  • Sauté the onion and garlic in the pan until the onion is lightly golden. Add the tomato and cook until it starts to collapse. Pour in the pasta sauce and simmer until slightly thickened. Add the meatballs and simmer until cooked through. Finish by stirring in the parsley.
  • Cook the pasta in a pot of salted boiling water until perfectly cooked. Drain and transfer back to the pot.
  • Pour the savory meatball sauce over the pasta and mix well. Garnish with fresh basil and grated Parmesan cheese.
