Chorizo and manchego gougeres

Delicious cheesy French bites, great for sharing at parties!
Ingredients:
  • 1.25 gm smoked paprika
  • 1.20 gm sea salt flakes
  • 125ml (1/2 cup) water
  • 60g unsalted butter
  • 1.20 gm cooking salt
  • 1/2 tsp freshly ground black pepper
  • 100g (2/3 cup) plain flour, sifted
  • 3 eggs, at room temperature
  • 80g (1/2 cup) finely chopped chorizo
  • 50g (1/2 cup) finely grated Manchego or shredded parmesan
Instructions:
  • Position 2 oven racks in the top third and center of the oven. Preheat the oven to 200°C/180°C fan forced. Line 2 large baking trays with baking paper.
  • Mix the paprika and salt flakes in a small bowl and keep it aside.
  • In a saucepan over medium-high heat, create a flavorful base by boiling water, butter, salt, and pepper. Add flour and stir with a wooden spoon until a ball forms. Lower the heat to medium-low and cook, stirring, for 1-2 minutes to cook out the flour.
  • Move the dough to a bowl and beat with electric beaters on medium speed for 3 minutes until it reaches room temperature. Add eggs one at a time, beating well after each addition until the mixture is thick and glossy. Gently fold in the chorizo and cheese.
  • After preparing the dough, place it in a piping bag. Pipe out 2.5cm discs on the trays, ensuring they are about 3cm apart. Sprinkle lightly with the paprika mixture. Bake in the oven for 20-25 minutes until they are puffed and golden. Enjoy warm.
