Savory beef and chorizo burgers with caramelized onions, smoky ranch sauce, and melted Manchego on sweet brioche buns.
Ingredients:
  • 1 pound ground sirloin
  • 1 pound chorizo sausage
  • 4 soft egg buns or brioche
  • 1 tablespoon softened butter
  • 4 ounces Manchego cheese, grated
  • 1 tablespoon vegetable oil
  • 3 medium onions, sliced
  • 1 tablespoon brown sugar
  • salt and pepper to taste
  • 1 cup ranch dressing
  • 1 roasted red pepper, quartered
  • 1 teaspoon Spanish paprika
  • 1 pinch powdered saffron
Instructions:
  • Blend ground sirloin and chorizo together by hand in a large bowl. Allow the mixture to rest for the flavors to meld while you prepare the onions and sauce.
  • Caramelize the onions: Heat oil in a large skillet over medium heat, then add onions, brown sugar, salt, and pepper. Cook and stir until the onions turn golden brown, approximately 15 minutes.
  • Simultaneously, prepare the sauce: Heat oil in a skillet over medium-high heat, then sauté the onion until tender. Transfer the onion to a blender, add ranch dressing, red pepper, paprika, and saffron, and pulse until the mixture is fairly smooth. Chill in the refrigerator until ready to use.
  • Prepare the burgers: Get your outdoor grill nice and hot, and give the grate a light coating of oil. Shape the meat mixture into four patties, just a bit bigger than the buns.
  • Grill burgers until well done, about 5 minutes per side. Split buns and spread butter inside. Toast on the grill briefly.
  • Assemble burgers by stacking Manchego cheese, caramelized onions, and ranch sauce on top of the buns.
