Spicy chorizo and pork burgers with capsicum and quick aioli, perfect for a quick meal or tasty tapas meatballs.
Ingredients:
  • 2 chorizo sausages, finely chopped
  • 6 fresh spicy pork sausages (about 500g total), skin removed
  • 1 garlic clove, finely chopped
  • 21.00 gm lemon juice
  • 18.20 gm extra virgin olive oil
  • 59.40 gm good-quality whole egg mayonnaise
  • 2 red capsicums, quartered
  • Olive oil, to brush
  • 6-8 small pita rounds, warmed
  • Rocket leaves, to serve
Instructions:
  • Combine the chorizo and sausage meat in a bowl, using your hands to ensure they are well mixed. Form 6 large or 8 smaller patties, then refrigerate for 15 minutes to set.
  • Combine garlic, lemon juice, extra virgin olive oil, and mayonnaise in a small bowl. Season with sea salt and freshly ground black pepper to taste. Set aside.
  • Preheat a grill or chargrill pan over medium heat. Cook the capsicum for 3-4 minutes until charred and tender. Remove from heat.
  • Brush the burgers with oil and grill them for 3-4 minutes on each side until fully cooked. Keep an eye on them while cooking to prevent burning, and adjust the heat as needed.
  • Assemble by placing grilled capsicum, a chorizo burger, and rocket on top of warmed pita rounds. Finish with a generous drizzle of aioli before serving.
