Delicious pumpkin sauce with chicken sausage, perfect for pasta, ravioli, or as a soup in a bread bowl!
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 medium yellow onion, chopped
  • 1 clove garlic, minced
  • 1 link apple-chicken sausage, diced
  • 2 cups low-sodium chicken broth
  • 1 (15 ounce) can pumpkin puree
  • 0.5 cup light sour cream
  • 0.5 cup 2% milk
  • 2 tablespoons light cream cheese
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 pinch ground cardamom
  • ground black pepper to taste
Instructions:
  • In a pan over medium-high heat, sauté onions until translucent, around 7 minutes. Stir in garlic and cook until fragrant, approximately 1 minute. Incorporate sausage, stirring occasionally, for 5 minutes. Pour in chicken broth and let it simmer for 5 minutes.
  • Combine pumpkin puree, sour cream, milk, cream cheese, cinnamon, nutmeg, and cardamom until smooth. Simmer on low heat for 5 minutes until sauce thickens. Season with pepper to taste.
